Three Fried Stuffed Treasures
Three Fried Stuffed Treasures Chinese: 煎釀三寶; Sidney Lau: zin1 joeng6 saam1 bou2 is a traditional street food popular in Hong Kong, Macau and parts of Canton.[1] The food is serviced in a set of three fried food stuffed with dace fish paste. Customers choose their set from different types of food, like bitter melon, eggplant, tofu, long chilli, fish balls [2]and Chinese red sausage[3]

Name
The name of Three Fried Stuffed Treasures originates from its presentation. Dace fish paste is stuffed into the bodies of vegetables and other foods. The items are as full as treasures and are sold in a set of three.[4]
Taste
The Three Fried Stuffed Treasures tastes sour with fishy favour. Soy sauces or Worcestershire sauce is added in the Three Fried Stuffed Treasures. Chilli oil is also a condiment for a spicy taste. A good piece of Three Fried Stuffed Treasures should be rich in savouriness with a unique mouthfeel.[5]
Recipe
Smash the meat of dace fish into meat paste. The dace fish meat is preserved mandarin peel, cilantro, green onions and seasonings like salts and white pepper powder.[6] In some situations, a certain amount of flour is added to the paste for cost reduction. The vegetables are sliced and emptied into the center. Dace fish paste is stuffed into the foods.[3][7] They are fried on an iron griddle. The product serves in polystyrene foam containers or skewers.
